i hear you Tom about working nights, I'm planning on having the help do all the labor and i'm really not expecting to make much of a profit at all, it would be more to get my foot in the door for other work.

lol Chris, slave labor it is, or at least it looks like! i don't know how you guys do this all year, my feet hurt, my body is sore, definitely need a break

I'd consider it if I could get training somewhere locally. It would be a good "in" with restaurants to do their flatwork. One major advantage in KEC is that you've got fire marshals, fire safety code, law etc demanding that it be done. One downside is that last time I checked Joe Walters has no interest insuring it.
